To those who know me well it shouldn´t come as a surprise that I love sushi.
I could eat it everyday for a whole week straight (yes, I've tested that :) ).
That is probably why I fell in love with these quick nori rolls. They're easy to make. Mind you, if you expect them to taste exactly like sushi: they're not entirely the real deal.
It's more a savory 'snack' that you can serve along side a protein source. Without rice, you'll save a lot of calories this way. They would be perfect on a diet or during contest prep, when you can't have it both ways.

Protein: 8 g
Fat: 11 g
Carbohydrates: 7 g (~5.5 g netto carbs)

Ingredients*
1 Nori sheet
1/2 Cucumber (about 75 g - 2.6 oz, depending on how thinly you slice it)
4 slices Avocado (~ 20 g - 0.7 oz total)
A few strands of long stem sprouts (I used about 3 g - 0.1 oz pea sprouts)
1,5 tbspns Cream cheese
*this is per roll, you can make as many as you'd like.
Directions
1. Slice the cucumber in (very) thin slices. You could also slice it vertically.
2. Place them on the nori sheet and add the cream cheese on top. Make sure you leave about 1 inch of room at the bottom, in order to roll it easily later.
3. Add the avocado slices.
4. Add the sprouts.
5. Roll it carefully, but tightly.
Chop it in half or smaller pieces (use a sharp knife) and serve it with soy sauce.
